apple crumble cake

* preparation: 30 minutes

* baking time: 55-60 minutes 

* For a 30cm diameter baking tray 


 

  1. Preheat oven to 350°F (175°C) for at least ten minutes
  2. Separate egg whites and the yolks

  3. Beat the egg with a pinch of salt until stiff

  4. Combine egg yorks with sugar, cinnamon, butter and milk.

    Whisk until foamy.

  5. Fold in beaten egg whites carefully

  6. Spread mixture onto greased baking tray. Spread evenly.

  7. (Peel) apples, cut into wedges (8pieces). Distribute evenly on

    dough

  8. Put into preheated oven for 30 minutes.

  9. Meanwhile prepare crumble: Combine flower, sugar and butter

    (butter needs to be cool)

  10. Take out cake from oven. Distribute crumbles over apples and almonds over crumbles

  11. Put back to oven for another 25-30minutes

  12. Let cool off for min. 30 minutes

  13. Enjoy with whipping cream or vanilla ice cream 

Dry ingredients

3 cups organic spelt flour

¾ cup raw cane sugar

2 ½  tbs baking powder

1 tsp cinnamon

pinch of salt

½ cup cut almonds for the topping

Wet ingredients

5-6 apples

1 cup butter

5 eggs

6 tbs milk (or vegetal milk)

For the cramble topping

¼ cup raw cane sugar

¼ cup spelt flour

¼ cup butter
